This is actually not really a recipe, it’s just a reminder that meat and salad are a perfect match for a light meal in summer. Those who have eaten tasteless turkey hen and supermarket salad too often might have forgotten. Forget the turkey, take beefsteak instead, fry it briefly (it should be still bloody inside), cut it in slices and serve it with fresh rocket salad from the market. Because the beef is an essential ingredient and you don’t need too much, you could ask yourself: how much is a piece of meat worth to me? This could be the perfect moment to invest in grass-fed meat. This meat is 100% organic: it is beef from cows that live outside and eat grass or hay instead of concentrated feed. It’s way more expensive than the beef offered by supermarkets, but it tastes so much better. If you are lucky, it will taste so good that you are able to remember the flavor even the next day.

Grass-fed beef also provides valuable nutritive substances which you don’t find in concentrated feed beef. The steak should be served at room temperature, and ideally the frying pan is not coated but made of cast iron. The concentrated butter has to be very hot when you put in the steak, fry it one minute per centimeter. Prepare the rocket salad with balsamic vinegar and olive oil, grind Parmigiano Reggiano cheese on top and serve it with fresh white bread – Italians call it “Tagliata” and eat it on hot summer days.
